Kabobs say summer to me.
When a friend from the Canadian Free Stuff forum TheirMinion said she was making kabobs for dinner the other night I got the craving. I asked TheirMinion for her recipe and she said she did not have one… huh? TheirMinion described her plan to me. It sounded really good and fantastically (that’s a word right?) easy. We love easy for the summer. Even I could BBQ these.
The kicker was when TheirMinion sent me this picture. I KNEW I had to make them and share them.
TheirMinion made her own baked meatballs. We all do that right? Make extra for the freezer? Then you will be able to thaw your meatballs and BBQ a great easy meal. I will share my meatball recipe on another post.
The assembly of these are pretty easy. Make sure you soak your skewers so they don’t catch fire! Then skewer the meatballs, onions, chunks of pineapple and red pepper. TheirMinion basted hers with her favorite brand :) of Sweet & Sour sauce. You want to make sure to reheat the meatballs and gently grill the veggies and fruit.
TheirMinion paired this with rice and corn on the cob. While chatting about the meal idea TheirMinion said next time she would include something red. She is right after all we do eat with our eyes first right? Red pepper or cherry tomatoes? I think red pepper would work better in this instance.
