So I really like popcorn. I could eat it every day. There are some weeks that I do eat it every day for lunch.
I have seen the homemade microwavable popcorn recipe floating around the interwebs & I finally decided to try it. My daughter has a pretty high affection for popcorn as well so I made us some for an afternoon snack. Since I was sharing with the little one, I did keep it on the healthy side & instead of using butter, I cooked the popcorn in coconut oil.
- 1/4 cup popcorn kernels
- 3 tablespoons coconut oil
- brown bag
- salt or any other flavors to season
- Put the popcorn & the coconut oil in the brown paper bag. Fold top over a few times and tape it.
- Place in microwave folded side up for 2 to 3 minutes or until there is 5 seconds between pops. The bag does get messy/oily from the coconut oil as it melts so you might want to lay a paper towel underneath the bag prior to popping just to prevent your microwave from getting oily.
