One of my favorite craft blogs saved my “Cool Mom” status. I have been following Our Best Bites for a long time now. There are so many fantastic and easy crafts and recipes. The recipe// idea that saved my title of “Cool Mom” is their Colorburst Cupcakes.
I made these a couple of years ago for DD to bring to school. Here is the end result:
I am no good with icing so I just skipped that part. I told myself I was doing the teacher a favor leaving off the icing.
Apparently these made an impression as one of DDs schoolmates asked if I was making these again.
Here is the recipe and directions:
Colorburst Cupcakes
Our Best Bites ( http://www.ourbestbites.com/2009/05/colorburst-cupcakes/ )
1 white cake mix
2 eggs
1 C yogurt (any smooth textured fruit flavor is fine!) or sour cream
1/2 C milk
1/3 C vegetable oil
Combine all ingredients until incorporated (about 30 seconds). Scrape sides of bowl and then beat on med-high speed for 2 minutes.
Divide batter according to how many colors you are using. I used 5 colors and it worked out to a little over 1 cup for each color, but each cake brand will be slightly different.
Use food coloring to color batter to desired intensity.
To get a layered stripe like I used, you’ll want to put a spoonful of each color in the cupcake one at a time. The batter is thick, so it won’t spread on it’s own. A great tip is to set out a little bowl of water where you’re working. Dip your finger in the water and then gently spread the batter out. The water will make it so the batter doesn’t stick to your fingers.
Bake them according to the package directions, until a toothpick comes out dry.
***One more thing about this recipe. The food coloring I used was Wilton Gel Icing colors. One more thing that Our Best Bites taught me. :)
The gel is really concentrated so you only need to use a little to color the batter. They even have a no-taste version of red. So that you can avoid that metallic taste being added to your cupcake.
Have fun and if your are more adventurous than I am you can try adding icing and sprinkles like Sara from Our Best Bites did. Here is a picture from Our Best Bites of Sara’s finished product:
Maybe for DDs next birthday I will add icing and upgrade from “Cool Mom” to “Super Mom”!! Beware teachers!!
