My new Favourite Salad Dressing

1/4 cup Cider Vinegar or Less (I prefer Less)
1/4 Cup vegetable Oil
1/2 tsp. salt
1/4 tsp pepper
6 tsp. sugar
1 tsp. garlic powder
1/2 tsp. parsley
1/2 tsp sweet basil (or I prefer chopping fresh)

Mix all indredients in a container with lid and shake well. Pour over salad just before serving. This is a sweet but nicely seasoned dressing. I find it very light and you don't need to use too much of it to go along way.

You will be surprised how such simple ingredients taste fantastic together. Enjoy! :cooking:

Southwest Chicken Salad

I don't have exact measurements for this but you can judge for yourself how much you like or don't like.

Layer a plate or platter with washed/torn romaine lettuce. Sprinkle on some salsa then layer with black beans, corn, and some shredded grilled chicken breast. Pour some of your favorite ranch dressing over that and then break up some tortilla chips over top for a crunchy finish.

Pinwheel Appetizers

Package of large, white tortilla wraps
Package of Philadelphia Cream Cheese
Can of canned chicken
1-2 cups grated cheddar
2 green onions
2 tbsp salsa

Mix all ingredients (minus tortillas) in bowl and spread evenly onto tortillas. Roll tortillas (with mixture on inside) into log shapes and wrap each one separately in plastic wrap and refrigerate for a few hours. When ready to serve, cut log into bite-sized pieces and serve with salsa and sour cream.

YUM!!!

this same recipe with salmon or tuna is also delish!!

This is a great sauce that would work wonderfully with awaite's meatballs. Once I make the meatballs I mix up this sauce throw it all in the mircowave and presto your done. Very tasty!

Mix together
1/2 cup Grape Jelly
1/2 cup Chilli Sauce
1 Tsp Mustard
Wisk with a wire wisk to break up the jelly and then just pour over meatballs and heat. Use a cassarole dish for easier clean-up. I have even done this in the slow-cooker and it still turns out awesome.

Quick & easy treat, you most likely have everything you need in your kitchen.

Low-Calorie & Low-Fat super-quick & healthy no-bake summertime dessert.

1 cup low-fat or fat-free yogurt (I like plain, but feel free to substitute)
2 sweet apples, chopped into 1" cubes (your choice here, I like Royal Gala)
1 cup seedless grapes
1/4 cup of chopped walnuts (easy on these if you're going low-calorie)
Cinnamon to taste (I use LOTS)

Stir it together, making sure everything is well-coated in yogurt.

That's it! I love making this, and the kids & I love eating it!
