| Junior Beaver | this one is a bit of work and time but it's well worth the effort. ![]() Lemon Meringue Cake cake: 1/4C softened butter 1/2C sugar 1 egg plus 2 yolks 1C flour 1tsp baking powder 1/3C milk 1/2tsp vanilla cream butter and sugar. add egg and yolks, mix well. combine flour and baking powder; add to creamed mixture alternately with milk. mix well, add vanilla. pour into a greased and floured 9in round pan. bake @ 350 for 25-30 minutes. cool in pan for 10 minutes before removing to wire rack. filling: 2 yolks 1C water 3/4C sugar 1/3C flour 1/2tsp grated lemon peel 1/4C fresh lemon juice 1tbsp butter In a pot combine yolks, water, sugar, flour and lemon peel. bring to a gentle boil over medium heat. cook, stirring constantly until thickened (about 20 minutes) stir in lemon and butter. meringue: 4 egg whites @ room temp 1/2tsp cream of tartar 1/2C sugar beat eggs until foamy. add cream of tartar. beat on high for 1 minute. add sugar 1tbsp at a time. beat well after each addition. beat until stiff peaks form (about 3 minutes) Place cake on baking sheet. spoon filling onto cake to within 1/2 an inch of the edge. carefully spread meringue over filling - sealing to edge of the cake and down the sides. bake @ 350 for 12-15 minutes. until merignue is nicley browned. *i have never made it with store bought cooked pie filling but i imagine it would be the same.. |
