Raspberry Dream Bars

Base

1 cup butter
1 cup white sugar
2 cups all purpose flour
1 egg

Filling

2/3 cup raspberry preserves/jam

Topping

1/4 cup melted butter
2 eggs
1 1/2 cups flaked coconut
1 teaspoon white sugar

Cream butter and sugar. Add egg and mix. Add flour and blend well. Pat into a 13 by 9 inch pan.

Spread jam evenly over the top.

Combine remaining ingredients to make the topping.
Spread evenly over the jam layer.
Bake for 25 minutes in a 350F degree oven (175 Degrees C)
Cool pan completely on a rack and then cut into bars.
Makes about 18 portions.

my sister in laws Mom makes the same kind of thing but she puts the jam and coconut mixture into mini tart shells. Coconut Jam Tarts are a Holiday favorite here.
i'll try these bars for sure.
