food Broccoli Tortellini Soup~so yummy

Here is a soup recipe that I made today, it's so yummy, I'm planning on making it quite often over the cold winter

Broccoli Tortellini Soup
Warm soothing soup is a perfect lunchbox idea for chilly fall and winter days — and it takes less than 15 minutes to make. And since almost every kid loves pasta, they'll gobble it up without even noticing the nutrition-packed broccoli.

Servings: 4 to 6
Ingredients:

1 tbsp (15 mL) vegetable oil
1 onion, chopped
1 carrot, diced
3 cloves garlic, minced
1/2 tsp (2 mL) dried oregano
1/4 tsp (1 mL) each salt and pepper
4 cups (1 L) vegetable or chicken stock
1 cup (250 mL) pasta sauce
Half bag (454 g bag) frozen cheese or meat tortellini
2 cups (500 mL) frozen cut broccoli
1/4 cup (50 mL) grated parmesan cheese
Preparation:
In saucepan, heat oil over medium heat; fry onion, carrot, garlic, oregano, salt and pepper, stirring occasionally, until onion is softened, about 5 minutes.

Add stock and pasta sauce; bring to boil. Add tortellini; reduce heat, cover and simmer until pasta is almost tender but still firm, about 7 minutes.

Add broccoli and return to simmer; cook until piping hot and broccoli is tender-crisp, about 1 minute. Ladle into bowls; sprinkle with cheese.
