creamy potato cheese soup

Saute in a stock pot until onion are tender:
One chopped onion
Two crushed cloves of Garlic
2 tbsp butter

Add the following to the pot and cook until potatoes are tender:
1 box of chicken stock
Fresh Thyme
5 medium peeled and diced potatoes
Salt and fresh ground black pepper to taste

Puree mixture then add:
3 cups milk
1 1/2 cups shredded sharp cheddar cheese

Chopped fresh parsley to garnish if you want

This recipe is soooooo much better with the fresh products. Try not to use dry herbs if you can.
