Greek Rice and Feta Salad

1 ½ cups minute rice
1 ½ cups boiling water
½ green pepper, chopped
½ cucumber, chopped
1 lg tomato, seeded and chopped
1/3 cup chopped green onion
1/3 cup black olives, sliced
1 cup crumbled feta cheese

½ cup miracle whip
½ cup Italian salad dressing
½ tsp each salt and pepper
1 tsp oregano leaves

-Pour boiling water over rice in a bowl; cover tightly with plastic wrap. Let stand till cool.
-Toss with vegetables and chesse.
-In a small bowl combine miracle whip, dressing and seasoning. Mix well.
-Toss with rice. Cover and chill.

Makes 4-6 servings.
