| Diva Beaver | 1 cup (250ml) boiling water 1 egg 1 cup (250ml) Post 100% Bran Cereal 1/2 cup (125ml) raisins 1/3 cup (75ml) light butter or margarine 1 cup (250ml) 2% or 1% or skim milk 1/3 cup (75ml) liquid honey 1 cup (250ml) all-purpose flour 1 cup (250ml) whole wheat flour 1 tbsp (15ml) Magic Baking Powder 1 tbsp (15ml) cinnamon 1/2 tsp (2ml) salt Pour boiling water over cereal, raisins and butter/margarine in bowl; stir until butter/margarine melts. Cool. Add egg, milk and honey; stir well. Mix remaining ingredients in another large bowl. Stir cereal mixture into dry ingredients, stirring just until moistened. Spoon mixture into muffin cups, generously filling each to the top (non-stick muffin tin or line tin with paper baking cups). Bake at 400 F (200 C) for 20-25 minutes or until browned. Cool on racks. Store in airtight container; freeze if desired. Makes 12 large muffins which provide you with a good source of fibre and are low in fat.
