| Baby Beaver | Chili Corn Bread 1 cup cornmeal 1cup flour 1 tbsp baking powder 3/4 tsp salt 3/4 cup milk (I used a can of cream corn small can 14 oz) 1 egg 1/4 cup of olive oil 1/4 cup of honey (you can add less) 1-4 oz can diced mild chili's drain if necessary 1/2 tsp cayanne pepper (optional) Preheat the oven to 425. In a large bowl combine cornmeal, flour, baking powder and salt, stir to blend. Add liquid ingredients, mix lightly, add chilis and cayanne, fold in with spatula. Pour into an8 inch pan or a small loaf pan. Bake until toothpick comes out clean. 25- 30 mins You can also add chopped red peppers or red onion chopped or sundried tomatoes or even olives. You can add cheese to this as well. If you find the batter it too moist add a bit more flour. I hope that you like this I make it a lot it goes nice with soup or just as a treat and it is best when you use the can of cream corn but if you don't like corn just use the milk. I also cut back on the oil as the can of corn added a little extra liquid to the mix. I hope you enjoy this |
