I just made muffins today, but I am going to try your pumpkin muffin recipe. It looks really easy to make, but sounds yummy. I think I'll cut back some on the sugar though, and use Splenda instead.

Thanks, ruboid123.

I made these muffins this morning, and they are just scrumptious! I used 1 cup of Splenda, instead of the 2 cups of sugar, and we found them sweet enough. The one I bit into was still warm, and it was almost flakey inside. Absolutely delicious!

Thanks for sharing this recipe, ruboid123.

I'm going to try them with Splenda as well then. Did you use the oil or did you use fruit pulp?

shades of Harry Potter! I reduced the sugar to a half cup honey and they still turned out well!
