Hi HappyCappy!! I don't have any good recipes but I was recently diagnosed with Type 2 Diabetes. I hope you get some recipes so I can copy them as well. Are you a diabetic?

No my husband is "borderline" his level is 6.8

Kinda hopeing some of our members will share their good ones,

I can find them on google, but you know would rather have "personal ones"

sorry to hear about your hubbie....i will keep my ears open for any good recipes...i agree with you i would sooner use personal tried and true recipes than just trying random ones...

here is a little serect all you have to do is with any recipe were is say add sugar add the same amount of splenda insist ok but I will get some recipes to you . Do I just put them on here . Please let me know thanks

Sugar -free Apple Pie

6 cups sliced peeled tart apples
1/3 cup apple juice concentrate
2 tbsp quick cooking tapioca
1 tsp ground cinnamon
1 unbaked pastry shell ( 9 inch)
1/2 chopped walnuts

In a large bowl, combine the first four ingredients let stand for 15 mintutes. Stir and pour into pie shell. Sprinkle with nuts. Bake 425 degrees for 15 minutes, reduce heat to 350 bake 40 to 50 minutes or until the apples are tender. Cover with foil during the last 15 minutes. Cool before serving.

This one taste good and Hubby liked it.

DIABETIC COOKIE
1/2 c. dates, chopped
1 c. white raisins, chopped
1/2 c. apples, chopped
3/4 c. nuts
1 c. water
1/2 c. butter
2 eggs, beaten
3 tsp. liquid sweetener
1/2 tsp. vanilla
1 tsp. baking soda
1 c. flour

Boil raisins and apples in the water for 2 or 3 minutes and cool. Then add rest of ingredients; mix. Refrigerate before baking. Bake at 350 degrees.

i have lots of recipes(like to cook)if anyone wants more just pm me and i will be happy to share....
my mom has diabeties,my aunt..and i had gestational diabeties during my last pregnancy.....
Orange Cheesecake
=================
CRUST
1 Cup Soft wholewheat bread crumbs
1/4 Cup Bran (natural)
1/4 Cup Brown sugar substitute (SugarTwin)
1/2 Teaspoon Ground cinnamon
2 Tablespoon Butter or margarine

FILLING
1 Tablespoon Unflavored gelatin (1 pkg)
1/3 Cup Water
2 Cups 2% cottage cheese
1/3 Cup Orange juice
1 Teaspoon Orange rind
1 Small Banana
2 Tablespoons White sugar substitute (SugarTwin)
1 Teaspoon Lemon juice
1 Small Orange
8 Strawberries or grapes

CRUST: Combine 1st four ingredients in a bowl. With fingers, rub in butter until mixture is crumbly. Press onto bottom of 7-8" springform pan.

FILLING: In small saucepan, sprinkle gelatin over water & let stand about 5 minutes to soften. Place over low heat, stirring until gelatin dissolves. Let cool to room temperature.

In food processor or blender, combine cottage cheese, orange juice & rind, banana, sweetener, lemon juice & dissolved gelatin. Puree until smooth (mash cottage cheese, banana with sweetener, juices & gelatin or press through sieve). Pour over prepared crust.

Cover & chill 2-4 hrs or until set.

At serving time, remove side of pan. With wide metal lifter, slip cheesecake off bottom of pan onto serving plate or leave on base of springform pan. Peel orange, removing pith & thin membrane. Remove sections. Slice strawberries or grapes. Arrange on top of cheesecake along with orange slices.

Canada/USA Canadian Bacon, Mushroom, and Peppers Pizza

My father was diagnosed with Diabetes about 10 years ago and we always try to put a healthy spin on his favorite food. This pizza is awesome!!

Canadian Bacon, Mushroom, and Peppers Pizza
(makes 6 servings)


1 11 1/2-inch (28.75 cm) thin-crust Italian bread shell
1 cup (189 g) Contadina Original Pizza Sauce
2/3 cup (80 g) shredded part-skim milk (1/3 less fat) mozzarella cheese
6 ounces (180 g) Canadian bacon, cut into bite-size pieces
1/2 cup (48 g) thinly sliced fresh mushrooms
1 small green or red bell pepper, 3 ounces (90 g) seeded and cut crosswise into thin rings
1/2 teaspoon (2.5 ml) crushed dried oregano
1/2 teaspoon (2.5 ml) crushed dried basil
crushed red pepper flakes (optional)


Preheat oven to 450°F (230°C). Place the shell on an ungreased 12-inch (30 cm) nonstick pizza pan.
To assemble the pizza, spread the pizza sauce over the shell, leaving a 1-inch border around the rim. Sprinkle with half of the cheese.
Arrange the Canadian bacon on top of the cheese, covering evenly. Top with mushroom slices and bell pepper rings. Sprinkle evenly with oregano, basil, and red pepper flakes (if using). Top with remaining cheese.
Bake for 13 to 15 minutes, until the crust is crisp and the cheese is melted and browned. Cut into 6 wedges.
