| Junior Beaver Join Date: Jul 2007 Location: Vancouver Island in British Columbia | At least that's how "Reader's Digest" titled the low fat recipie that I have used the last three times the craving hit. I really like it, please try it. INGREDIENTS 2 Tbsp butter (i use margarine) 1 c onions, chopped 2 tsp garlic, minced 1 Tbsp ginger, grated 1 tsp chili pdr 1/2 tsp ground tumeric 1/4 tsp gr cinnamon 19 oz can diced tomatoes, drained 2 Tbsp tomato paste 1 Tbsp brown sugar 1/2 tsp salt 1/4 tsp pepper 1 Rotisserie chicken, skin removed, cut up meat in chunks (i use leftover chicken) 1/3 c 5% light cream (i use condensed 2% milk in a can) 3/4 c light sour cream 1 Tbsp celantro, minced hot Basmati rice DIRECTIONS * cook onions and garlic in butter over low hear, 5 mins * add ginger, chili, tumeric and cinnamon (I know, weird combo, but the smell tells you right away your on the right track!), cook 1 min * add tomatoes, paste, sugar, salt and pepper, reduce heat to low, cover and simmer 10 mins stirring occationally * add cut up chicken, cream and sour cream (always add a bit of the hot juces to the sour cream to warm it up before dumping it into the pan, or it will curdle) * simmer uncovered for 5 mins, remove from heat, stir in celantro * serve over basmati rice I hope you like it as much as my family does. I makes quite a bit, but I like it for lunch at work, and get many jealous looks!! - This is my first blog ever, and when I saw your question I was glad I looked up this site. I like cooking and now I know were to ask for recipies, too. |
