| Smart Beaver | Chicken Paprikash This is one I've perfected over the years. It's easy, delicious and your company will be licking the pot clean. 1 chicken cut into serving pieces or chicken parts of your choosing (I usually skin the chicken) 2 green peppers cut into wedges 2 tomatoes (fresh from garden if possible) cut into wedges or 1 can of whole tomatoes cut up 2 onions cut into wedges and separated 2 tbsp. Hungarian paprika (hot or sweet or mix) (or more) Salt and pepper to taste Vegetable oil to coat bottom of large pot Cut up chicken Cut up vegies Heat up oil in pot and add paprika and cook for 1 minutes (do not burn) Add chicken and coat with paprika/oil mixture. Let cook for 5 minutes stirring occasionally (add more paprika if needed) Add vegies, mix well, cover and let cook for about 15 minutes stirring occasionally. Check for doneness - chicken pierces easily and clear juices run out, vegies tender. Serve with any starch - rice, noodles, potato, spaetzle, etc. Can be served with sour cream or yogurt - depends on how many calories you want (or don't want). |

| Smart Beaver | There are several kinds of paprika - some are hotter, some are milder. Generally I buy mine at a bulk place and use a mix. That being said, I first made this with regular bottled paprika and it was wonderful. |

Im Hungarian and am always interested in seeing what people think is Goulash etc...You gave perfect advice on cooking the paprika in oil first (the only way it disolves and releases flavor). Im betting your grandma made great dinners! |

| Smart Beaver | M Elle - I'm sure my grandmother did cook well but I never met her. I took a course in Hungarian cooking as well the mother of one of my best friends showed me Hungarian cooking at its best. What that woman could do with a chicken was amazing. |

One of the best things about Hungarian cooking is that if focuses on using cheap home grown ingredients, readily avail in a communist country-as Hungary so recently was. I love it because I can really streatch my budget, but eat really yummy too! Just need a pound of meat, onion, tomato, and a cabbage (and of course the best imported paprika my mom can smuggle into the country) and can think of 5 different dishes to make! |
