Topping:

½ cup white sugar
½ cup chopped pecans or walnuts
1 tsp. cinnamon
1 tblsp. Margarine

Melt margarine & stir with other ingredients – set aside to cool (I sometimes double the topping recipe cause it is sooo good)

1 ½ cups brown sugar
½ cup vegetable oil
1 egg
2 cups flour
1 tsp. baking soda
1 tsp. salt
2 cups rhubarb
1 cup (small container) sour cream

• Cream sugar and oil then add egg and beat well
• Stir dry ingredients together in a separate bowl
• Alternately add the sugar/oil/egg mixture with the sour cream to the dry ingredients
• Once everything is mixed together well, fold in rhubarb
• Spread in 9” x 13” greased floured pan
• Sprinkle with topping
• Bake @ 350 for 35-45 minutes
• Serve warm or cold….enjoy!
