This does not happen often. When it does I blog it. My whole family loved this recipe AND it is a healthy one at that. Yipppee!! I was looking for a drumstick recipe that would not heat up my house. The temp was around 40′ with the humidex (that’s 104′ for Fahrenheit-ers) so I hit my Pinterest page to see what I could make. I was soooo not doing shake and bake… again. I really need to stop buying that stuff.
Loved how it all came together at serving time. I put the rice in the microwave (1 cup rice 2 cups water HIGH for 20 minutes in the corningware, works EVERY time) made the salad while it was cooking. Super easy mid week dinner that the whole family ate. Score!
