It’s just about Halloween, and for a lot of people (myself included), that means making Jack-o-Lantern’s with the kids! It’ a whole lot of messy fun. My favourite part is making roasted pumpkin seeds. You get to dig through all the slimy “pumpkin guts” (as my boys call it) and pick out the seeds, then throw them in the oven and voila a healthy snack! Sure beats all that sugary treats the kids are going to bring home in the next few days (shhh, I’m trying to convince myself not to get into the kids candy this year).
Before we get to the recipe, I have one important tip. When you dig out all the pumpkin seeds, don’t rinse them, it ads flavour 🙂 But try to pick out all the pumpkin guts, and chunks (they will burn if you don’t)
Roasted Pumpkin Seed RecipePrint
- 3 Cups Pumpkin Seeds
- 4 Tsp Melted Butter
- 1 Tsp Salt
- 1 Tsp Garlic Powder
- 1 Tsp Seasoning Salt
- 1/2 Tsp Cayenne Pepper
- Preheat Oven at 275F
- Mix All Ingredients Well in a Large Bowl
- Spread Coated Pumpkin Seeds in a Single Layer on a Baking Sheet
- Bake for 45 Minutes
- Let Cool Ten Minutes, Enjoy!
