I will buy blocks of cheddar cheese that are packaged and throw them in the freezer just as it is. Then throw it in the fridge to thaw out for a few days. Since I generally shred my cheese or melt it in some sort – it doesn’t matter to me if it is crumbly. But if it’s for sliced cheese for a meat and cheese tray.
I then either use my Food Processor or Hand Grader, depending on how much cheese I will shred.

Can You freeze KRAFT Cheese Singles?
Kraft Singles don’t seem to be made with too much dairy in them, and they freeze well and also thaws nicely. It’s like it was bought from the refrigerated section. Depending on your singles of choice – some people have experienced white spots – but I haven’t seen that with any Kraft Singles I’ve bought.
Can you Freeze Shredded Cheese?
If it’s already packaged as in the picture above – You bet! Just toss it in the freezer, and you can use it once you thaw it out.
Money Tip – Generally, I don’t buy Shredded cheese – it’s always cheaper to shred your own! I only ever purchase it if I am in a pinch and don’t have any thawed for a particular dish last minute. You pay for the convenience of not having to do the work yourself.
If you plan to freeze cheese to use later on a pizza, shred your cheese first and then freeze it in the quantities you need later. You can also spread the shredded cheese out on a pan and freeze it like this to avoid clumping. Once the cheese is frozen, slide it into a bag. Make sure to put the date on the bag before storing it in the freezer.
How to freeze Cheese Cubes
Maybe you want to use your cheese for something else, like macaroni and cheese or tuna casserole. You can cube your cheese and freeze it just as you did the shredded cheese. Spread the cubes out on a sheet before placing them in the freezer. Once they are frozen, slide them into a bag and label them before placing them in the fridge.
When it comes to cubes or even sculpted cheese, you may be able to freeze small pieces without them breaking, but the consistency will still be different when you go to eat it. Whenever possible, use your frozen cheese for cooking and your fresh cheese for direct eating. Learning how to freeze cheese is more about understanding the consistency issue than anything else. You will always have cheese for your dishes by planning but may not have slices to snack on.
