    Moroccan Tagine Vegetarian

    This recipe uses Graves Chickpeas as a new way to eat on a Meatless Monday!

    • 1 1/2 tbsp olive oil
    • 4 garlic cloves, minced
    • 1 red chilli, thinly sliced
    • 1 tsp ground ginger
    • 3/4 tsp paprika
    • 1 can chickpeas rinsed and drained
    • 1 small eggplant chopped into 1-inch cubes (or 10 oz)
    • 1/2 can chopped tomatoes
    • 3 1/2 cups broth vegetable or chicken
    • 1 tsp cumin ground
    • Salt and pepper to taste
    • Chopped parsley for garnish (optional)

    Directions:

    Heat the oil in a large stockpot (or dutch oven). Add the garlic, chilli pepper, and ginger to the pan and cook for several minutes. Stir in the paprika.

    In a large saucepan, combine the remaining ingredients and bring to a low boil. Green beans: Fill a pot with enough water to cover the green beans by an inch or two; add half of the green beans; bring to a boil over high heat. Potatoes, tomatoes, eggplant, chickpeas, cumin and salt and pepper

    Reduce the heat to low and simmer for about 30 minutes. Adjust the spices as needed, then serve hot over rice or couscous (optional).
