Spring is officially here – and soon summer days will be ahead – and there’s nothing better than homemade Pina Coladas – The best one I have ever tasted was in Havana Cuba – and I’ve been tasting ever since looking for the perfect Pina Colada to come close to that hot afternoon! Well, I was in the Dominican for a wedding this spring – and attended the wedding at a Posh Platinum Resort – and had another absolutely awesome Pina!
I then came to the conclusion – we Canadians don’t have the heat of summer 12 months of the year to make this drink like our Caribbean friends. So I asked my new friend Nestrese who happens to be Native Jamaican about this perfect recipe –

We both agreed that Baileys ( Also see Home Made Baileys Recipe) had a huge part to play in the drinks perfection as well as Coconut Cream. ( Coconut Cream may not be easy to find – I found mine in an Asian food store. ) Malibu Rum has a great coconut flavour which adds to the greatness of this recipe. Real Pineapple takes it another level as well.
But I found the drink wasn’t sweet enough without adding a shot of Mott’s Pina Colada Mix
My Recipe is for the size of a Margaritaville so you may have to fiddle with the amounts if using a normal blender with ice.
The perfect summer drink – Pina Colada – Enjoy this drink – And If you prefer simply eliminate the alcohol for a Virgin Pina Colada.

Ingredients
- 4 oz of Coconut Cream (Coconut Milk does work – but it is thinner)
- 8 Cup of 100% Pineapple Juice from Concentrate – You want the sugary kind
- 4 Oz of Baileys
- 4 Oz of Malibu Rum
- 4 oz Mott’s Pina Colada Mix
- Ice
Instructions
- Add the Alcohol to the blender or Margaritaville and add all liquid to it. Blend and Serve.
- Serves 3 Large Drinks or 4 Solo Beer Cups
