A Combination of Sauces is how this Vh Pad Thai recipe was created for our Chicken! I was in a hurry the other day, and didn’t have enough sauce for the amount of chicken I was creating – and so this was made – and is now going on my list to recreate again in the future!

I usually am very health conscious but I was very much in a hurry and simply just wanted to Whip something together on what I had in the house!  I had one jar of VH Sauce: Pad Thai Sauce but didn’t think that was going to be enough for the number of chicken breasts I had to cook. – And this my friends is all it took to begin the Creative Process.

 

The Jar, of course, says 1 Meat, 1 Starch and 1 Veggie and to make a stir fry with the VH Pad Thai Sauce.  But I didn’t have any veggies cut up nor did have any frozen veggies. ( I am going on holiday – so I’m eating what I have this week)

( I am going on holiday – so I’m eating what I have this week)  – those are suggested to be used for and with, and I love to experiment with food, and for some reason, I don’t have a problem with fudging a recipe or just throwing things together to see if it works.

Not a Stir Fry

That’s Right! I used the VH Pad Thai Sauce for not a stir fry.  but I guess you could make my Cheat ways to create a stir fry sauce, I know I’ve done it in the past making an average stirfry.

Rice Noodles

Feel Free to Serve this chicken recipe with Rice Noodles, or just add some extra sauce to your noodles or even on rice if you choose to do so.  I didn’t have any rice noodle sticks at the time,

Bean Sprouts

I know bean sprouts can be a big hit in many houses, and I know my husband uses bean spouts in many dishes especially when making Asian cuisine. But this recipe isn’t calling for this ingredient

Green Onions

Green Onions go with everything. Feel free to add green onions or fresh cilantro if desired.

Thai Cooking

Traditional Thai cooking is not what you might expect. The cuisine has evolved over centuries with influences from China, India and other Southeast Asian countries that include Malaysia, Laos and Burma. T

Traditional dishes are made of fresh ingredients like coconut milk, ginger root, galangal (a ginger-like plant), lemongrass and cilantro leaves.

Some examples of traditional dishes ft are Pad Thai noodles with vegetables or shrimp; Tom Kha Kai soup which is a popular chicken soup flavoured with lemongrass, kaffir lime leaves and fish sauce; Garlic chilli paste which is used in many different recipes to add flavour as well as heat to the dish.

Our Chicken Pad Thai Recipe

The following Chicken Pad Thai is not traditional, nor should it be considered Thai anything really, because it’s completely Fauxed by all stretch of the imagination!

We used two canned ingredients, some peanuts, and chicken, and cooked it together to give it a fun exotic taste, but there’s nothing sophisticated about it!

It is a very easy pad Thai recipe that’s for sure!

The spicy sauce is a nice touch, with the peanuts to make the dish a bit crunchy, and well who doesn’t love a chicken thigh!

 

 Our Recipe Ingredients:

  • 1 Jar of VH Pad Thai Sauce
  • 1/2 Cup of Sweet Chili Sauce
  • 1/2 cup of Peanuts
  • 12 Chicken Thighs

We used Chicken Thighs, but you can use skinless chicken breasts if you wanted to substitute.

You will notice we used canned pad Thai sauce from VH found in your local grocery store, as well as we used Sweet Chili Sauce, and simply mixed these two ingredients together for an exotic taste in our delicious recipes for chicken

The Chicken Cooked:

We simply baked chicken in the oven using olive oil, but you can cook your chicken how you see fit, fried, baked, boiled.  – You just need to make sure it is cooked all the way through to avoid food poisoning

Add the VH Pad Thai Sauce Mixture from above and sprinkle peanuts on to finish this recipe off.

 

Serve with Rice, rice noodles, or just a salad.

Very Sweet Chicken Sauce that is hugely yummy!

Ingredients

  • 1 Jar of VH Pad Thai Sauce
  • 1/2 Cup of Sweet Chili Sauce
  • 1/2 cup of Peanuts
  • 12 Chicken Thigh

Instructions

  1. Spray a cookie sheet with olive oil and put chicken Thighs with another layer of olive spray to moisture the chicken : Cookie at 425 for 40 minutes.
  2. I used a Wok on Stove top : Transfer the Chicken thighs to wok and add the sauces and if you want the peanuts and Simmer on Low Medium Heat for another 20 minutes.
